South Indian Fish Curry

A delicious fragrant fish curry that is mild in flavour, makes it a great curry dish for the family and kids.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 servings

4 tbsp vegetable oil
1 tsp ground cumin
2 onions, thinly sliced
6 dried curry leaves
1 tsp ground turmeric
1 tsp ground coriander
1/2 tsp chilli powder
4 tomatoes, finely chopped
1 1/2 cups water
1kg blue eye fillet, cut into 3cm pieces
1 tbsp cornflour
2 tbsp chopped fresh coriander leaves, to serve
steamed basmati rice, to serve

Heat 2 tbsp of oil over high heat, add ground cumin and cook until fragrant. Reduce heat to medium, add onion and cook for 5 minutes until softened and slightly caramelised.

Add remaining spices and cook for 1 minute, then add tomatoes and cook for a few minutes until they soften and start to break up.

Add water and stir to combine. Continue cooking to thicken sauce.

In a bowl, mix cornflour with salt and black pepper. Dip to coat fish pieces.

Heat remaining oil in a separate pan and cook fish for 2 minutes each side.

Add fish to curry sauce. Cook over low heat until fish is just cooked through.

Sprinkle over coriander leaves and serve with basmati rice.
