Southern Fried Chicken: The Healthy Way

I love making healthier versions of my fast food favourties. So you don't have to forgo your loved junk-food, I've made southern fried chicken in a healthier, less heart-attack-waiting-to-happen way, so it can be enjoyed while still maintaining a healthy diet.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 4 servings

Ingredients
6 skinless, boneless chicken thigh
coconut flour
rosemary
marjoram
tumeric
cumin
black pepper
2 eggs



Method
Pour the coconut oil into a saucepan, and turn the heat to medium. It will warm while you prep your flour coating.

Pour the flour and seasoning into a large-ish tub (big enough to fit the meat in) and toss so there's an even distribution of flavours.



Crack the eggs into a bowl and whisk.

One by one dip the chicken in the whisked eggs, then transfer to the flour bowl until completed coated in flour.

Once each chicken thigh is coated place all the thighs in the frying pan.



Keep turning the meat every 5 minutes, (to stave off burning) until 20 minutes has passed.



Cononut and spelt flours are unrefined and natural options to regular white flour. Also coconut oil retains its natural properties even when it liquifies during cooking.



The fried chicken also make delicious chicken burgers if you're still in need of a fast-food fix - just make sure the burger buns are wholemeal.
