Soy Mirin Glazed Salmon

Packed with flavour, this Japanese inspired salmon dish is quick to prepared and just as quick to cook. Mirin is a sweet rice cooking wine which is great for making marinades.



Preparation Time: 7 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
2 salmon fillets
30ml mirin
30ml dark soy sauce
25g soft brown sugar
15ml Japanese rice vinegar



Method
  • Prepare the marinade by mixing together the mirin, soy sauce and soft brown sugar.



  • Mix well and the sugar will dissolve.
  • Place the salmon fillets into the marinade for 3 minutes on one side and then turn over for another 3 minutes.




  • Heat a frying pan to a medium heat (there is no need to add any oil).
  • Fry the salmon fillets, skin side down until the skin is crisp.
  • Pour in the marinade.
  • Flip the salmon fillets over and cook on the other side for another couple of minutes.



  • Remove the salmon fillets and set aside.
  • Add the rice vinegar to the marinade and stir through.
  • Drizzle the marinade and rice vinegar glaze over the salmon fillets and serve.



  • Try simple boiled sticky rice for an authentic side to this dish. You could also add some thinly sliced cucumber or spring onions for a fresh crunchy garnish.
