Spaghetti and Meatballs with Banana and Home Made Tomato Kale Sauce

These meatballs were not fried but cooked in water making them healthier! They are unusual in that I added banana and grated apple.

I have a lot of miniature kale growing in my garden so I chopped this up finely and added it to both the tomato sauce as well as the meatballs.

Preparation Time: 55 minutes
Cooking Time: 1 hour 15 minutes
Serves: 3 - 4

Ingredients
For the tomato sauce
1 kg ripe tomatoes - I use Roma
1 shallot, chopped finely
1 small carrot, chopped
2 tbsp tomato paste
1 tsp parsley, chopped
Pinch sugar
Handful of kale, chopped (optional)

For the meatballs and spaghetti
300 g mince, low fat one
1 onion, finely minced
1 mashed banana
1 apple, grated
Handful of kale, chopped (optional)
Quantity of spaghetti

Method
For the tomato sauce
  • I started on the tomato sauce first as this takes the longest and as I like this home made sauce to be thick I cooked it for a long time -this is optional however.

  • Chop the tomatoes and put into a pan with the vegetables.

  • Add the parsley, some salt and pepper, the kale, and sugar.


  • Simmer until the tomatoes have cooked almost to a puree, and then add the tomato paste.

  • Continue to cook until it reaches your required thickness, and I cooked it about an hour.

  • Put through a sieve and discard the vegetables.


  • Keep the thick, rich tomato sauce till ready, and then heat in the microwave if needed.


  • For the meatballs
  • Combine all the ingredients, except the spaghetti and roll into very small balls.


  • Put about 3 cms of boiling water in a large frypan, and put these meatballs in the simmering water.

  • While this is cooking, cook the spaghetti or whatever pasta you are using as per the packet instructions, and leave in hot water until the rest of the meal is finished.

  • Turn the meatballs once and cook for about 8 minutes.

  • Remove from the pan and drain well.

  • Put some spaghetti on the plate and top with the meatballs.


  • Spoon as much of the tomato sauce on as you wish.

  • Leftovers from this meal can be kept for days, and just heated up in the microwave.
