Spaghettini with BBQ Pork & Mushroom in Soy Sauce

This is a fusion of Italy's pasta and Asia's sauces. All ingredients are my favourites. The thin, long spaghettini can be ready in just 5 minutes. Garlic has a strong fragrance and mushroom has great taste. Soy sauce can often produce a more tasty flavour than salt does. Char siu/bbq pork is always my first takeaway priority.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

200g spaghettini
150g shimeji mushroom, root removed
150g button mushroom, sliced
5-6 garlic cloves, thinly sliced
150g char siu/bbq pork, sliced
1 tbsp extra light olive oil
1 tbsp dark soy sauce
1 tbsp soy sauce
1 tbsp extra virgin olive oil
2-3 cups water
Some dried/fresh herbs

In a saucepan, add in 2-3 cups of water and some salt, bring to boil.
Put spaghettini to the pan, stir and boil until tender or done, in just 5-6 minutes.

Drain cooked spaghettini and set aside.

In a frypan, add 1 tbsp extra light olive oil over a medium-high heat, add in garlic slices, stir fry quickly.
When garlic slices change to brown, add in button mushroom, shimeji mushroom and char siu, stir fry quickly for 2 minutes.
Pour in 1 tbsp dark soy sauce, 1 tbsp soy sauce and 1/2 cup water, stir to combine.

When liquid reduces to half, turn off heat.
Pour in stir-fried ingredients to the saucepan with drained spaghettini in, add in 1 tbsp extra virgin oil and some dried/fresh herbs, stir well to combine, season to taste.

Serve topped with some more herbs.
