This is a spanakopita recipe (Greek spinach pie), only instead of putting it into pastry, I decided to fill it into potato skins.
I had it as a main, however it would also be a good accompaniment if you eat meat.
I have used frozen spinach as I find this is far easier to cook with than fresh, and often has more taste than the fresh spinach, however you could use fresh spinach and chop it finely.

Cooking Time: 40 minutes
Makes: 4 half potatoes
Ingredients
2 large potatoes, washed
½ cup onion, diced
250 g frozen spinach, thawed and drained
1 clove garlic, crushed
½ tsp oregano
60 g reduced fat cream cheese
½ cup feta cheese, crumbled
For the salad
Rocket
A few tomatoes
Dressing of your choice
Method
Preheat the oven to 200°/180° fan forced.
Pierce the washed potatoes in several place and bake them for about 50 to 60 minutes. Let them stand till cool enough to handle.
Meanwhile, heat a bit of oil to a medium heat and cook the onion until it is soft.
Add the spinach, garlic and oregano and cook, stirring until it is hot - this should take about 3 minutes. Take off the heat.
Reduce the oven temperature to 190°/170° fan forced.
Cut the cooked potatoes in half and carefully take out the flesh, leaving a thin skin and potato.
Put the skins on a pan, lined with baking paper.
Add the cream cheese, and some pepper to the bowl with the potato.
Mash with a potato masher until the mixture is smooth.
Stir in the spinach mixture and half the feta.
Carefully fill the potato skins with this mixture.
Top each one with some of the remaining crumbled feta
Bake until the filling is hot and the feta has browned -about 20 - 30 minutes.
For the salad
Mix the rocket and chopped tomatoes in any quantities.
I also added a bit of left over crumbled feta.
I mixed some oil and a bit of balsamic as a light dressing, and poured this over the salad.
Serve the salad with the potato spanakopita.
The second night I had this with my sweet potato noodles, kale and bacon.
