Spanish Salted Salmon Fritters

These delicious palm sized morsels are packed with tos of flavour, mainly saltiness and moreishness. They are crispy and crunchy, you will love these golden salted salmon croquette style fritters from the first bite.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings

500g potato
300g smoked salmon
60g fresh dill
1 avocardo
1 truss tomato
1 Spanish onion
120g fresh rocket
8 asparagus stems
160g tempura butter powder
300ml canola oil
Salt & pepper to season


Wash and peel the potatoes.
Cut potatoes into large chunks
Cook potatoes into boiling water for 5 minutes.

Place smoked salmon, chopped french onion and fresh dill in a blender.
Season with salt and pepper.

Roughly blend the smoked salmon mixture.
Remove and set aside.

Place the soft boiled potatoes into the blender.

Blend well until the potatoes achieve a fluffy texture.

Place a handful of mash potato in your palm, add a spoonful of the smoked salmon mixture and roll into a ball shape.

Lightly flatten the potato fritter ball into a patty shape.

Dip the fritter patty in egg white.
Then coat in tempura batter powder. Dust off the the excess.

Heat the canola oil in a deep fryer.
Deep fry the fritter until golden and crunchy.
Remove and set aside.

Cross section of the beautiful salted-salmon fritter :)

Place rocket, diced avocardo and tomato on top of the fritter.

Garnish with grilled asparagus and fresh dill
Season with salt and pepper.
