Special Fried Rice

Cooking Asian at home is surely not this simple?



We’ve all ordered it, we’ve all tried to replicate it at home and we have all tried different variations of it. No matter how many restaurants you have been to, there are many different versions of fried rice. I personally like Chinese fried rice and I also like Thai ‘Special’ fried rice. At home, I always use fresh vegetables and left overs like roast chicken, smoked chicken, roast pork, beef etc. Eggs are also very important and I like to use lots of them; they add to the texture and the taste. This recipe is quite simple and you can make it in less than half an hour. You will be left with a tasty dish that will excite your family and impress your guests.

Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 8-10 servings

Ingredients
2 cups rice
6 eggs
3 carrots (diced)
250g peas
1 can corn
12 frozen cooked prawns
500g left over roast chicken
1 red onion
1 garlic clove
4 tbsp oyster sauce
3 tbsp soy sauce
3 tbsp olive oil


Method
  • Cook rice in a saucepan until soft.



  • Scramble the eggs in a separate saucepan or wok and put aside.



  • Fry up onion and garlic on olive oil in a wok.

  • Add diced carrots, peas and corn.



  • Add shredded leftover roast chicken.



  • Add frozen cooked prawns.



  • Stir in the cooked rice, add soy sauce and oyster sauce and blend together gently with a wooden spoon.



  • Serve up
