Spiced Apricot Chicken

This is a different way to prepare a family favourite without the usual store-bought soup mix. It is sweet and savoury with a lovely hint of spice.



Preparation Time: 25 minutes
Cooking Time: 90 minutes
Serves: 3 - 4

Ingredients
3 - 4 chicken thighs, cubed
1 stalk celery, sliced
1 carrot peeled, sliced
1 brown onion sliced
1/2 capsicum sliced
1 small zucchini, diced
1 teaspoon crushed garlic
400 ml apricot nectar
10 - 15 dried apricots, halved
1/2 teaspoon each ground coriander, paprika
1/4 teaspoon each cinnamon, turmeric, white pepper
1 teaspoon each cumin, onion powder
3 cups chicken stock
1/4 cup plain flour
2 tablespoons olive oil
Salt to taste



Method
  • Coat the chicken pieces in the flour.
  • In a large pot, heat half the oil to a high heat. Brown the chicken then turn the heat down to medium.
  • Add the remaining oil then the onion, celery, carrot and capsicum. Saute for 5 minutes until softened.



  • Put in the garlic, onion powder and spices, cook until aromatic. Pour in the nectar and the stock, then add the apricots.
  • Cover and simmer slowly for 45 minutes, stirring occasionally. You can cook it longer if you wish, you may need to add some water if you do.
  • Add the zucchini and cook until tender, about 15 - 20 minutes.



  • Season, then serve with steamed rice or couscous.
