Spiced Apricot Chicken
This is a different way to prepare a family favourite without the usual store-bought soup mix. It is sweet and savoury with a lovely hint of spice.

Cooking Time: 90 minutes
Serves: 3 - 4
Ingredients
3 - 4 chicken thighs, cubed
1 stalk celery, sliced
1 carrot peeled, sliced
1 brown onion sliced
1/2 capsicum sliced
1 small zucchini, diced
1 teaspoon crushed garlic
400 ml apricot nectar
10 - 15 dried apricots, halved
1/2 teaspoon each ground coriander, paprika
1/4 teaspoon each cinnamon, turmeric, white pepper
1 teaspoon each cumin, onion powder
3 cups chicken stock
1/4 cup plain flour
2 tablespoons olive oil
Salt to taste
Method
Coat the chicken pieces in the flour.
In a large pot, heat half the oil to a high heat. Brown the chicken then turn the heat down to medium.
Add the remaining oil then the onion, celery, carrot and capsicum. Saute for 5 minutes until softened.
Put in the garlic, onion powder and spices, cook until aromatic. Pour in the nectar and the stock, then add the apricots.
Cover and simmer slowly for 45 minutes, stirring occasionally. You can cook it longer if you wish, you may need to add some water if you do.
Add the zucchini and cook until tender, about 15 - 20 minutes.
Season, then serve with steamed rice or couscous.
