Spiced Banana Bread Porridge

Is there really anything more comforting and tantalising than the smell of homemade banana bread?
 
Savour this delicious breakfast twist on the baking favourite - sweet, spiced and 100% natural.
 
Using maple syrup instead of honey to sweeten your breakfast is an easy way to veganize without compromising on flavour. Other tasty plant-based sweeteners include agave or coconut nectar.



Cooking Time: 8 minutes
Serves: 1

Ingredients
1/2 cup (50g) oats
1 very ripe banana, chopped or mashed
1 tbsp walnuts/pecans
1 cup (250ml) almond milk
1/2 tsp cinnamon
2 tsp maple syrup, to drizzle

Method
  • Place oats, banana, walnuts/pecans and almond milk in a medium saucepan. Bring to a gentle boil, then reduce to a simmer, stirring consistently for 5-8 mins.



  • If you want a thicker texture, leave over a low heat for a few minutes longer, otherwise remove from heat and spoon into a serving bowl.

  • Stir well before topping with cinnamon and a drizzle of maple syrup.
