Spiced Berry Chia Pot
Love 'em or hate 'em, the indomitable
chia seed looks set to become a mainstay in popular dietary culture. As a vegetarian, I am personally a fan as they provide a good dose of protein. Here's one of my favourite chia breakfasts.
Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 1 serving
Ingredients
1 cup almond milk (or any milk of your choice)
1/4 cup chia seeds
Handful of blueberries
Dash of vanilla extract
1 teaspoon maple syrup (or sweetener of your choice)
Dash of cinnamon
Method
Pour the milk into a glass or jar.
Add the vanilla and sweetener and whisk until mixed.
Add the chia seeds and cinnamon and whisk.
Leave on the bench for a few minutes and whisk every minute to prevent clumping.
Cover and refrigerate overnight (or at least 4 hours).
Stir through the blueberries, top with yoghurt (coconut yoghurt used here) and a sprinkle of cinnamon.
