Spiced Dhal Soup with Coconut Rice
Savour the subtle spices and flavours of this Asian inspired dish that is both very healthy, and very filling. Great for the time poor and the ingredients are reliably household items.

Makes: 4 servings
Ingredients
Coconut Rice
2 cups rice (we used brown rice)
2 cups water
250ml coconut cream
Dhal Soup
1 tbsp vegetable oil
1 onion, chopped finely
2 tsp ginger
2 tsp ground cumin
1/2 tsp cayenne pepper
1/2 tsp ground turmeric
400g can brown lentils
2 cups vegetable stock
bunch coriander, roughly chopped (to serve)
Method
Place coconut rice ingredients in a saucepan and bring to the boil. Reduce heat and simmer until all the liquid has been absorbed and rice fluffy.
Meanwhile, in a large saucepan, heat the oil over a medium heat. Add the onion and cook until soft.
Add the ginger, cumin, cayenne pepper and turmeric, and cook for a further 30 secs.
Transfer lentils and stock to the saucepan and mix well. Allow to simmer for 5 mins before removing from the heat.
Serve on a bed of coconut rice and with a sprinkle of the chopped coriander.
