Spiced Flatbread
This delicious flatbread will make your curries, soups and stews extra special. It is full of flavour, and easy to prepare.
Preparation Time: 1 hour (with resting)
Cooking Time: 10 minutes
Serves: 4
Ingredients
1 cup plain flour
1/3 - 1/2 cup water
1 teaspoon cumin
1/2 teaspoon each salt, paprika and coriander
1 teaspoon crushed garlic
2 tablespoons olive oil
finely chopped chilli to taste
Method
Put the flour, salt and spices into a large bowl. Combine well with a spoon, then make a well in the centre.
Add 1/3 of a cup of water. Then put in the oil, garlic and chilli. Stir well until it comes away from the sides of the bowl. Slowly add more water if the mixture is too dry.
Flour a board lightly, then knead the dough for 5 minutes, until It becomes smooth. Put in a warm place to rest for 30 minutes.
Divide the dough into 4 pieces and flatten with your hand.
With a well oiled rolling pin, roll out until flat, and no more than 3 mm thick.
Heat a large pan to a high heat. One by one, cook the flatbread, on the hot, dry pan. Turn them when the dough becomes translucent, about 3 minutes on each side.
Serve with your favourite curry, soup, stew or salsa.
