Ingredients 1 tbsp vegetable oil
2 medium brown onions, sliced
4 teaspoons ground cumin
1 teaspoon dried chilli flakes
4 carrots, halved, sliced
1 large zucchini, quartered lengthways, sliced
1 cup dried red lentils
2 tbsp vegetable stock powder
500ml can coconut milk
Heat oil in a large pot over a medium heat, and add onion. Cook until softened.
Add cumin and chilli, cooking until fragrant (about 1 min).
Mix through the carrot and stir occasionally for 5 minutes.
Next, combine zucchini, lentils, stock powder, coconut milk and 6 cups cold water, and add to the pot. Bring briefly to the boil, then reduce and simmer for about 40 minutes or until both lentils and vegetables are tender. Serve steaming hot.
