Spiced Persimmon Biscuits

These soft, slightly chewy biscuits are delicately spiced and infused with lots of wholesome ingredients. The delicious and unusual combination of spices, fruits and nuts blend perfectly together to create a unique biscuit with lots of contrasting flavours and textures. Additionally, you could try substituting your favourite nuts and dried fruit for a personal twist on this recipe.

These nutritious biscuits are simply delicious.

Preparation Time: 20 minutes
Cooking Time: 15-20 minutes
Makes: 46 servings

2 cups white spelt flour, sifted
1/3 cup caster sugar
110 gm butter, room temperature
1 egg
1/2 tsp salt
1 tsp baking powder
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground cardamom
1 cup peanuts, chopped
1 cup sultanas
2 ripe persimmons

Youíll love all the different flavours and textures in these biscuits.

Preheat your oven to 150 degrees Celsius (fan forced).
Peel and dice the persimmons before placing them into a blender. Blend until you have a puree consistency. Set aside.

Combine the butter, sugar and salt in a bowl and beat with an electric mixer until the mixture is pale and fluffy.

Add the egg and the persimmon puree to the mixture and stir until combined.

Stir in the flour, baking powder, ginger, cinnamon, cloves and cardamom. Mix well.

Finally, add the sultanas and peanuts to the mixture and stir until everything is blended together.

Place spoonfuls of the mixture onto greased baking trays and bake for 15-20 minutes.

Biscuit Tray

The biscuits wonít colour too much, therefore you might like to check the base for a nice golden-brown colour before removing from the oven. Allow to cool on wire racks.

These biscuits are a nutritious treat that everyone can enjoy. The flavours blend well and donít overpower, which means almost every tastebud should love them. Furthermore, I replaced white all-purpose flour with spelt flour in this recipe, making it an even healthier snack option.
