Spiced Pumpkin Dahl

Lentils are a student's staple ingredient. They're cheap, healthy and easy to cook, but what can you do to make them taste good?

Try making this spiced pumpkin dahl.

Preparation Time: 5 minutes
Cooking Time: 30-40 minutes
Makes: 4 large servings

Ingredients
1 x 400g tin lentils, drained (or dried if you have them)
400g pumpkin, diced
1/2 brown onion, diced
2 cloves garlic, chopped finely
2 tsp vegetable stock powder (or 2 stock cubes, crumbled)
2 chillies, chopped finely
1 tsp ground cumin
1 tsp paprika
2 tsp garam masala
1 tsp pepper
Boiling water

Method
Gently fry the onion, garlic and chillies in a large saucepan until onion is soft and browned.
Sprinkle in spices, turn down the heat and stir for 30 seconds or until fragrant.
Add lentils, pumpkin and vegetable stock. Pour in enough boiling water to just cover the pumpkin and stir well.
Simmer on a moderate heat for 20-30 minutes, or until pumpkin is soft and the stock has evaporated to make a sauce.
Mash with a potato masher until the dahl is no longer lumpy, stir again and serve over rice.
