Spiced Rhubarb Compot

A compote is essentially a fruit stew. With the addition of spices and vanilla this compote is the perfect topping for muesli, yogurt, ice cream or toast instead of jam.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 8 servings

Ingredients
5 cups diced rhubarb
1/2 tbsp cinnamon
1 vanilla bean
1/2 lemon
1/2 c brown sugar
2 tbsp water



Method
  • Cut the rhubarb into 1 inch pieces.

  • Place the rhubarb in a hot pan with the water, brown sugar, cinnamon and vanilla.


  • Bring to the boil then reduce to a simmer, squeeze in the lemon juice and stir. Rhubarb falls apart completely and become mush, remove the fruit from the heat when you have the desired texture.


  • I like to still have chunks in my compote so remove the stew when only half the fruit has been reduced.

  • Pour the hot compote into sterilized jars to store.


  • Enjoy on a variety of dishes or give as a gift.

  • NOTE: Store in the fridge once a jar has been reopened like regular jam.
