Spiced Sour Cream Coffee Cake

Delicious crumble topping with the aroma of spices to go with that afternoon cup of tea.

Preparation Time: 5 minutes
Cooking Time: 45 minutes
Makes: 8 to 10 servings

For the streusel:
2/3 cups firmly packed dark brown sugar
3/4 cup all purpose flour
1 1/2 teaspoons ground cinnamon
4 tablespoon unsalted butter, melted and cooled

For the cake:
2 cups all purpose flour
1 1/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon table salt
pinch of ground cloves
8 tablespoon unsalted butter, softened
1 1/4 cups firmly packed light brown sugar
1 teaspoon pure vanilla extract
2 large eggs, room temperature
1 cup sour cream, room temperature

To make the streusel:
In a small bowl, combine the brown sugar, flour and cinnamon
Drizzle over the melted butter and using a fork or fingers mix the ingredients until it forms small crumbs. Put in the fridge while you prepare the cake

To make the cake:
Preheat oven to 170 degrees Celsius. Lightly greased a cake tin of your choice
In a medium bowl, combine the flour, baking soda, cinnamon, nutmeg, salt, and cloves. Whisk until well blended
In a large bowl, beat butter, sugar and vanilla with an electric mixer on medium speed until well blended about 3 mins
Add the eggs, one at a time, beating well after each addition. Stop to scrape the bowl and beaters as needed
Add about half of the flour mixture and mix on low speed just until blended
Add the sour cream and continue mixing just until blended. Using a rubber spatula, fold in the remaining flour mixture
Scrape half of the batter into the prepared tin and spread evenly
Evenly scatter half of the streusel mixture over the batter. Spoon the remaining batter evenly over the streusel and spread evenly
Scatter the remaining streusel evenly over the top
Bake until top is browned and pick inserted in the center of cake comes out clean, about 45 mins

This cake was a big hit at home and with my classmates. The crumble topping with the smell of cinnamon is amazing especially if you love spices!

You can replace the sour cream with yougurt or buttermilk.
You can replace the spices with dried fruits of your choice.
