Spiced Sweet Potato Bake

Sweet potato is one of the tastiest, most nutritious fibrous food, and when coupled with chicken it is the ultimate post-workout meal that is a great combination of protein and complex carbohydrates. Nutritional benefits aside this dish is is a delicious, and simple dinner for all to enjoy.



Preparation Time: 15 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
2 chicken breast fillets
2 sweet potatoes
1 onion
A handful of fresh thyme sprigs
Half a tsp of black pepper
1 tsp of mixed spice
1 tsp of paprika
Half a lime



Method
  • Dice the chicken and poach it in 1 pint of boiling water for 10 minutes.

  • Slice the onion.



  • Rip off a large section of foil and season the foil with all the spices and oil.



  • Remove the chicken from the saucepan, and add to the foil along with the sliced onion, ensuring they are all coated with the seasoning.



  • Carefully lift the foil into a baking tray and squeeze on the lime.



  • Place in the oven for 10 minutes at 180 degrees/gas mark 4.

  • Place the sweet potato in a saucepan on boiling water for 10 minutes.

  • Remove the sweet potato and slice.



  • Remove the chicken from the oven and add the chunks of sweet potato. Toss and place back in the oven for 20 minutes.



  • Remove the tray from the oven, and the meal is done.
