Fruit chutney with a kick.
Preparation Time: 20 minutes
Cooking Time: 3 hours
Makes: 3 large jars
Ingredients
1kg apples, peeled, cored and sliced
1kg tomatos, diced
2 cups of water
1 tbs mustard powder
2 onions
1 tbs crushed garlic
1/2 cup sultanas
3/4 brown sugar
5 tsp curry powder
1 tsp cayenne pepper
1 tbs salt
2 1/2 cups malt vinegar
Method
Put the apples and water into a saucepan and bring to the boil.
Simmer for a further 25 mins or until the apples are tender.
Add the tomatos, mustard powder, onions, garlic, sultanas, sugar, curry powder, cayenne pepper, salt and vinegar to the pan.
Simmer for 3 hrs, stirring occasionally.
When the mix is a thick pulp, cool and bottle in jam jars.
