Spicy Argentinestyle lamb Pincho Kebabs
Cheap, easy, quick and delicious. The fun of this recipe is you can adjust spice mix to your taste: spicy, hot, mild, fragrant, whatever; get into it and experiment!

Preparation Time: 30 minutes plus 1hr in fridge for mixture to set (with practice you'll get prep down to 15 minutes)
Cooking Time:10 minutes
Makes: 2 large serves (or two serves plus leftovers)
Ingredients
Spice Mix
1 teaspoon (tsp) coriander seed
1/2 tsp cumin seed
1/2 tsp fennel seed
Fresh or dried chilli to your taste
1 tablespoon (tbsp) chopped ginger
2 cloves garlic roughly chopped
1 tsp black peppercorns
1 tbsp almonds (ground, flaked or crushed)
Fresh coriander, parsley & oregano (experiment with herbs YOU like or have at hand)

500 g lamb mince (you can substitute any red or white meat)
1 free range egg
Gluten-free maize flour for rolling

Method
Dry roast coriander, cumin and fennel seeds until the kitchen smells like a meditteranean bazaar.
Dry roast seeds until fragrant
Place seeds and other spice mix ingredients in a mortar and pestle and 'smash up' until all ingredients are well mixed.

Using wet hands, combine spice mix with beaten egg and lamb, measure out in 6 x 100g hamburger size balls (Yes, they make great hamburger patties!) on to floured surface.

Keeping hands wet, on floured cutting board, roll out into 'fat sausage' size fingers, skewer with stainless steel (or wood skewers soaked in water).

You're nearly there! Refrigerate skewers for at least one hour. Time to relax with a glass of Mendoza Malbec, and fire up the BBQ.
Cook on a medium hotplate, turning only once per side
Cook for 3 minutes per side medium rare or more to you liking. Rest Pincho on a warm plate while you plate up the vegies or salad. Enjoy!
