Spicy Baked Trout

I like to think trout is the friendly cousin of salmon - it looks the same, but is a shade more red, than pink. Spicy, baked trout is just as delicious as spiced salmon, but with a slightly earthier flavour, which is balanced with vegetables and rice.

Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 2 servings

2 trout fillets
1 tsp garam masala
3 garlic cloves
Black pepper
Half a pack of mangetout
1 red pepper
5 cherry tomatoes
1 cup of rice
A bunch of spinach

Required ingredients

Place the trout in a foil-lined baking tray and season with three thyme sprigs, salt, pepper, and garam masala.

Pop in the oven at 180 degrees or gas mark 4 for 30 minutes.

Wash the mangetout and cherry tomatoes in a sieve.

Chop the pepper.

Wash half a cup of rice in a sieve and add to a sauce of 1 one cup of water, cover and simmer for 15 minutes.

15 minutes have passed, add the mangetout, tomatoes, and chopped pepper to the trout and put back in the oven for 15 minutes.

Remove the lid and serve the rice.

Cooked rice

Remove the baked trout and vegetables and serve.
