Spicy Bean Medley
This
is one of those delightful meals that fills you up without weighing you down.
A fibre and protein rich vegan main that can be served warm or cool for lunch or dinner. Perfect for when you crave something fresh and light with a hint of indulgence!

Makes: 6 servings
Ingredients
2 tbsp olive oil
1 red onion, finely sliced
1 tbsp garlic, minced
1 red chilli, finely sliced
250g cherry tomatoes, halved
300g can broad beans, rinsed
300g green beans, trimmed
100g can peas, rinsed
100g can borlotti beans, rinsed
1 tbsp parsley leaves, finely chopped
Method
Heat olive oil in a frying pan over a medium heat. Saute onion, garlic and chilli until softened.
Add the cherry tomatoes, 1/3 cup water, beans and peas, and simmer for 10 minutes or until cooked through.
Sprinkle over parsley and season with cracked black pepper if desired. Remove from heat and serve warm or cooled.
