Spicy Black Gram Donut
This donut is a crispy and spicy snack and tastes really yummy when served with coconut chutney. This deep-fried, fragrant donuts has all the goodness of an indulgent snack.
A good quality of black gram lentil is a must to make this. Use black grams without the black skin. Use very little water to make a thick batter so that the donut will absorb very less oil.If you grind it for a long time, the batter will become very sticky and you may not be able to shape it.

Makes: 20 donuts
Ingredients
2 cups of black gram lentil
4 cups of water
2 tbsp rice flour
1/4 cup onion chopped
3 green chillies chopped
1-inch ginger piece crushed
A pinch of baking soda
1 tbsp crushed black pepper
Curry leaves chopped
Salt to taste
Oil for frying
Method
Wash and soak the black gram in water for 1 hour.
After 1 hour, wet a grinder. Add the soaked lentil and grind into a smooth paste without adding water. If it is difficult to grind, sprinkle very little water and grind. You should get a thick, smooth and fluffy paste-like batter.
Transfer the batter to a bowl and whisk for 5 minutes. This will make the donut soft.
Add the chopped onion, chilly, ginger, curry leaves, black pepper, baking soda, rice flour and salt to the batter. Mix well with a spoon and let the batter sit for 10 to 15 minutes.
The batter must be very thick. Then only you can shape it. If you feel it is not thick, try adding a little rice flour.
Heat oil in a pan or skillet. Then apply water to wet the palm of your hand. Place a spoon of batter on your wet palm. Press it slightly with fingers of the other hand to make a round shape. Now, using one finger, make a small hole in the middle of it.
Drop it carefully into the hot oil. Fry the donuts on medium heat until both sides are golden brown.
Transfer to a tissue to absorb any excess oil. The soft and fluffy donuts are ready. Serve hot with coconut chutney or any dip you like.
Wet your palm every time you make the round shape. This will prevent the batter from sticking to your hands.
