Spicy Chicken and Coconut
This was a delicious spicy chicken dish which used just one pot.
I added some leftover rice and a microwaved potato to it as well as some fresh corn off the cob.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Serves: 3
Ingredients
4 chicken thighs, chopped
1 medium onion, sliced
½ red capsicum, chopped
About ¾ cup of coconut milk
30 ml red curry paste
½ tbsp fish sauce
¼ cup of water
Parsley or basil
Potatoes - optional
Corn on the cob - optional
Method
Heat a tbsp of oil in a wok.
Add the chicken in batches and stir fry for about 15 minutes until tender.
Remove from the wok.
Heat a bit more oil and add the onions and red capsicum and stir-fry until the onions are soft.
Add the chicken back in.
Add the coconut milk, paste, fish sauce and water. Stir until the mixture boils.
Add the cooked potatoes and some cooked rice if using.
Stir in the parsley and serve.
