Spicy Chicken Rice Bake

This is an easy dish to make using simple ingredients. Everyone will love the delicious Mexican inspired flavours.



Preparation Time: 20 minutes
Cooking Time: 50 minutes
Serves: 4


Ingredients
3-4 chicken thigh fillets
1 can diced tomatoes
1/2 red capsicum diced
1 carrot peeled and diced
1/2 brown onion peeled and diced
1/2 cup corn kernels
1-3 large green chillies finely chopped
1 teaspoon crushed garlic
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon onion powder
1 teaspoon dried oregano
150 grams white long grain rice
1 1/2 cups chicken stock
2 tablespoons olive oil
1 cup cheese (tasty, mozzarella and Parmesan)
salt and pepper to taste


Method
  • Preheat oven to 180 degrees
  • Cut the chicken into bite sized cubes.
  • Heat half the oil in a large saucepan to medium high heat. Add the chicken to the pan. Cook until coloured, but not cooked through. Set aside.



  • Add the remaining oil to the pan and lower the heat to medium. Put in all of the diced vegetables, and saute for 5 minutes until softened.
  • Stir in the rice, chilli, garlic and spices.



  • Cook until fragrant and the rice has been coated in oil.
  • Return chicken to the pan with the stock, corn, oregano and tomatoes. Turn down the heat, cover, and simmer for 15-18 minutes.
  • When the rice is cooked, and the liquid is almost absorbed, remove pan from the heat. Season, then stir in 1/3 of the cheese. Transfer mixture to a large baking dish.



  • Sprinkle on the remaining cheese.
  • Bake for 15 minutes, or until golden brown and bubbling.
