Spicy Chickpeas With Spinach
For those days when you need something quick, nourishing and inexpensive to cook, test out this flavoursome vegi meal.
It comes to about $3 per serve, can be made easily in under half an hour, and leftovers make welcomed meals for following days.
I prefer serving with steamed brown rice, but jacket potatoes do nicely, as does thick, toasted slices of bread.
Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings
Ingredients
2 tbsp olive oil
1 red onion
4 tomatoes, chopped
2 tbsp curry paste
1 cup vegetable stock
2 x 400g can chickpeas
100g spinach
cracked black pepper
Method
In a medium saucepan, heat the oil and cook the onion until soft.
Add the tomatoes, curry paste, vegetable stock and chickpeas to the pan, bringing to the boil, and then simmering for 10-15 minutes.
Stir through the spinach and allow to wilt.
Remove from the heat and season with cracked black pepper. Spoon atop a bed of steamed rice, cooked jacket potato, or slices of warm toast, and enjoy!
