Spicy Chickpeas With Spinach

For those days when you need something quick, nourishing and inexpensive to cook, test out this flavoursome vegi meal.



It comes to about $3 per serve, can be made easily in under half an hour, and leftovers make welcomed meals for following days.

I prefer serving with steamed brown rice, but jacket potatoes do nicely, as does thick, toasted slices of bread.

Preparation Time: 15 minutes
Cooking Time: 10 minutes
Makes: 4 servings

Ingredients
2 tbsp olive oil
1 red onion
4 tomatoes, chopped
2 tbsp curry paste
1 cup vegetable stock
2 x 400g can chickpeas
100g spinach
cracked black pepper

Method
  • In a medium saucepan, heat the oil and cook the onion until soft.

  • Add the tomatoes, curry paste, vegetable stock and chickpeas to the pan, bringing to the boil, and then simmering for 10-15 minutes.

  • Stir through the spinach and allow to wilt.

  • Remove from the heat and season with cracked black pepper. Spoon atop a bed of steamed rice, cooked jacket potato, or slices of warm toast, and enjoy!
