Spicy cubed pork stir fry

I have never been an admirer of pork until I made it. My mother had always asked me to taste it at least once whenever she prepared it. But I always hesitated.

Anyway, this recipe is adapted from my mother. I made it for my family and now I also got addicted. This is an inevitable dish during the festive seasons in many Kerala Christian homes.

Preparation Time: 20 minutes
Cooking Time:40 minutes
Makes: 4 servings

1 kg pork
2 cups of sliced onion
3 tbsp crushed or finely chopped ginger
1 tbsp garlic paste
3 green chilli
4-5 cloves
2.5 cm cinnamon stick
1 anise seed
1 tsp turmeric powder
2 tsp ground black pepper
1 tsp fennel seed
1 tomato finely chopped
1/2 tsp chilli powder
1 tbsp oil
1/2 tsp mustard sauce
Curry leaves
Salt to taste

Cut the pork into small cubes. Wash and drain the cubed pork. Put it in a pressure cooker.

Wash the pork

Add ginger, garlic paste, a few curry leaves, sliced green chilli, turmeric powder, black pepper, 2-3 cloves, cinnamon, anise seed and salt into the cooker. Mix well and marinate for 10 minutes.

Pressure cook for 20 to 25 minutes on medium heat or until the pork is well cooked. Switch off the heat and let it sit until the pressure drops.

Now heat oil in a pan. Crackle the fennel seed. Then add a handful of curry leaves into the hot oil. Saute the sliced onion until translucent.

Add the chilli powder and stir cook for a few seconds. Then add the tomato and mustard sauce. Cook until the tomatoes are mashed.

Now add the cooked pork along with the broth into the pan. Stir to mix well. Cook until all the water is absorbed and the curry is dry with occasional stirring.

Add cooked pork and cook until dry

Remove from heat and serve hot.
