Spicy Date and Walnut Loaf

This cake is dark, spicy and moist and is at its best if you store it for a day or two before eating.

Preparation Time: 10 minutes
Cooking Time: At least 1hour 30 minutes in a greased and prepared 900g loaf tin in an oven preheated to150C/300F/Gas 2 .
Makes: Approximately 10-12 slices

Spicy Date and Walnut Loaf

110g butter
175g golden syrup
50g black treacle
150ml milk
2 large eggs
225g plain flour
1 teasp mixed spice
2 teasp ground ginger
1 level teasp bicarbonate of soda
110g stoned dates
50 walnuts

Put the butter, golden syrup and treacle in a large saucepan and heat gently until melted.

Remove from the heat and leave to cool for a few minutes before adding the milk.
Lightly beat the eggs and add them to the liquid.
Sift the flour with the spices and bicarbonate of soda into a bowl.

Gradually whisk in the liquid ingredients until the batter is smooth.

Fold in the walnuts and about two-thirds of the dates.
Pour the mixture into the prepared tin and drop the remaining dates on top.

Bake for about 1 hour thirty minutes before checking. When it is cooked a skewer will come out clean when pushed into the cake, and the top will be rounded and slightly cracked.
Leave the cake to cool in the tin for about another half hour before turning out on to a wire rack to cool completely.

Serve the cake sliced, and buttered, if you wish.
