Spicy Eggplant Relish
This neat little Asian inspired side dish has a depth of flavour and spice that belies its simplicity. Enjoy with a warm roti or serve with steamed rice and curry, or even - as I have taken to doing - make the feature of a main meal.
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 cups
Ingredients
1/3 cup olive oil
1 red onion, sliced finely
1 eggplant, cubed
1/3 cup korma curry paste
400g can diced tomatoes
2 tbsp apple cider vinegar
1/2 cup water
Method
Heat the oil in a medium-sized saucepan over a moderate heat. Add the onion and eggplant and cook for 10 minutes or until soft through.
Stir through the curry paste until combined and aromatic.
Add the tomatoes, vinegar and water to the mixture, then bring to the boil. Simmer for 30 minutes or until the mixture is very soft. Serve either hot or when cool.
