Spicy Lemon Strips

Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
400 grams extra lean ground turkey breast
1/3 cup chopped parsley
¼ cup finely diced onion
½ tablespoon pepper
1 cup chickpeas
2 tsp chili powder
1 tsp garlic powder
1 tsp. Lemon herb (or any other spice of choice)
½ cup egg substitute or eggs.

Method
1. Preheat the oven to 375 degrees.
2. Spray a cookie tray lightly with non-stick cooking spray.
3. In a large bowl, mix together the ground turkey, parsley, pepper, onion, pureed chickpeas, and egg substitute.
4. Roll the ground turkey mixture into small meatballs and place on prepared pan.
5. Bake meatballs in the oven at 375 for 20 minutes or till no longer pink inside.
6. Serve with your choice of side dish – salad, brown rice, or steamed vegetables.
