Spicy Noodle Broth

Nothing warms you up like a spicy meal or a bowl of broth on cold days, so if you want to be doubly warm, why not just mix the two together? This vegan dish is sure to make your face glow. If you prefer slightly less heat, then simply reduce the amount of chilli flakes.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 5 servings

Ingredients
150ml vegetable stock
150ml almond or coconut milk
½ lemon
350g tofu
270g ready cooked noodles
1 tbsp curry powder
¼ tsp chilli flakes
150g sweetcorn
½ onion

Method

  • Chop the tofu and onion, and simmer in a pan with the vegetable stock and milk.


  • Stir in the sweetcorn, chilli flakes, and curry powder.


  • Drain and snip the noodles into small strands, and then stir in.


  • Remove from the heat, and squeeze over the juice half a lemon.


  • If you would prefer a stir fry as opposed to a broth, drain the liquid.
