Spicy Pork Cool Cous Cous
Hot or cold, Lots of chilli or just a bit, however you like it, whenever you like it.
Preparation Time: 45 minutes
Cooking Time: 35 minutes
Makes: 4 servings
Ingredients
1 pork fillet 400 grams aprox
1/8 pumpkin, diced.
2 carrots, sliced finely.
8 prunes, pitted.
1 chilli
1 teaspoon honey
1 orange
1 glug olive oil
1 glug sherry
1 cup cous cous prepared as recommended on packet.
Spices: Shake ground cummin, shake ground coriander, shake ground ginger, shake ground nutmeg.
Method
Combine vegetables in baking tray with the juice and skin of one whole orange. Place in oven on moderate to high heat for 10 minutes.
Marinate pork fillet in sherry, spices, honey, prunes and chilli. This can be done ahead of time and placed in fridge for best results.
Brown pork fillet in pan.
Once fillet is browned, place on top of vegetables in oven and return combined dish back into medium to high heat oven. Cook for 30 minutes aprox.
Once cooked remove pork and allow to sit for five minutes before slicing. Meanwhile combine prepared cous cous with roasted vegetables.
When ready combine all ingredients on plate.
