Ingredients
1 x 400g tinned chickpeas
1 baking potato
1 orange pepper
2 green chillies
60g sweetcorn
20g grated parmesan
1 tbsp olive oil
1 tsp white wine vinegar
4 tbsp lemon juice
2 tsp ground chives
2 tbsp mixed spice
Method
Chop and steam the potato and orange pepper.
Drain the chickpeas and mix with the potato, pepper, and sweetcorn.
Chop and deseed the chillies before stirring in.
Mix together the olive oil, vinegar, and lemon juice and stir into the salad.
Stir in the chives, mixed spice, and parmesan.
