Spicy Puffed Rice
Here is a dish that's popular amongst all Indians. It's consumed on cold evenings or during the rainy season. I remember returning in from the soaking rain after school and eating a bowlful of spicy puffed rice whilst my Mum scolds, but also lovingly dried my head with a warm towel at the same time.
Preparation Time: 10 minutes
Cooking Time: 10-14 minutes
Makes: 4-5 cups servings
Ingredients
Pan with caramelised remnants of ghee OR a thick pan
2-3 tsps cooking oil
1 cup washed & dried fenugreek leaves
1 handful coriander leaves
1 - 2 sprigs curry leaves
2-3 cups plain puffed rice
1 cup roasted peanuts / cashews
1/2 cup shaved coconut
1/2 cup finely chopped onions
1/2 cup finely chopped green mango
1 tsp mustard
1 - 2 tsp chilli powder
1 tsp turmeric powder
1-2 tsp salt
1 pimch asafoetida powder
Method
Use the caramelised ghee pan or heat a fresh pan with 1 teaspoon of cooking oil for about 1-2 minutes.
Test the heat by sprinkling 1 or 2 mustards, if it fries immediately then the oil is ready.
Add mustard, curry leaves and turn the heat to simmer then saute.
When the mustard splutters, add fenugreek leaves, peanuts/cashews, shaved coconuts and add turmeric powder.
Once peanuts and cashews turn golden brown add chopped onions, mangoes, chilli powder and salt.
Add another teaspoon of oil to this mix and sprinkle asafoetida powder on the mixture.
Add all the puffed rice to this mix and turn them over and over until the herbs and spices have mixed well with the puffed rice.
You may add 1/2 teaspoon chilli powder more to get a spicier mix. Add a spray coat of oil to cook
Keep stirring until about 5-6 minutes.
Take it off the stove & change contents to a new bowl.
Now garnish with coriander leaves (can also add a dash of lime juice when serving).
After it cools down store in a dry airtight container.
Use within a week or it loses it's tangy flavor.
