Spicy Red Cannelloni

A recipe for those spice and herb lovers out there. This heart-warming recipe would make a great meal on any day.




Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 2 servings

Ingredients
1 tbsp sundried tomato
2 tbsp tomato paste
1 tomato finely diced
1 crushed garlic clove
4-5 handfuls spinach
200g ricotta
1 tsp parmesan cheese
2 tbsp olive oil - or any other cooking oil
4 cups water
1 tin chopped tomatoes
4 cannelloni tubes
100g grated cheddar or mozzarella cheese
Pinch of salt
Pinch of herbs and spices to desire (basil, thyme, marjoram, oregano, nutmeg, mixed spices, black and white pepper recommended).


Method
Firstly, preheat oven to 200ÂșC.

Then, finely chop onion, garlic and tomato.

Heat saucepan with oil and place in the chopped onion, garlic and tomato. Allow to cook for a few minutes until onion and garlic is golden, stirring throughout.



Place sun dried tomato and tin of tomato along with tomato paste, herbs and spices, as well as grated cheese and 4 cups water.

Allow the above ingredients to simmer for at 5 minutes, stirring every meanwhile.



Once the above ingredients are cooked, place aside and begin stuffing cannelloni tubes with mixed spinach and ricotta with a pinch of salt.



Lastly pour simmered cannelloni sauce into baking tray and place cannelloni tubes in one layer sideways of the tray. Drizzle with olive oil and place in oven to cook for about 30 minutes.

Serve this heart-warming dish hot, garnished with parmesan cheese to taste.
