Spicy Roasted Chickpea, Sweet Potato and Spinach Salad

Roasted chickpeas taste nutty, spicy and provide great texture to this healthy salad. The dressing tastes great, but this salad is delicious on its own even if you do not like dressing.

Spicy Chickpea, Sweet Potato And Spinach Salad
Tasty and healthy salad

Preparation Time 10 minutes
Cooking Time 55 minutes
Serves 4

400 g chickpeas, drained
2 tbsp olive oil
2 large potatoes, cut into bite sized pieces
1 medium sweet potato, cut into bite sized pieces
400 g baby spinach
10 cm cucumber, sliced
1 red capsicum, sliced
1 tomato, sliced

Spice mix
1 tsp salt
1 tbsp paprika
1 tbsp ground cumin
1 tsp cayenne pepper
1 tsp turmeric

Dressing (optional)
2 tbsp olive oil
1 tbsp lemon juice
1/2 tbsp red wine vinegar
1 tsp honey

Preheat the oven to 170 degrees. Line two baking dishes with baking paper.
In a bowl combine the spice mix.
Drain the chickpeas, place in a bowl, add 1 tbsp of the spice mix and stir to combine. Bake for 55 minutes or until crunchy.
After you put the chickpeas in the oven, cook the potatoes in water in a saucepan covered on medium heat for 10-12 minutes. Drain, pat dry and place on a baking dish.
Add the sweet potato, oil, remaining spice mix and toss to combine. Place in the oven with the chickpeas and bake until golden brown, approximately 40 minutes.

In a bowl add the dressing ingredients and whisk to combine.


Put the baby spinach leaves, cucumber, capsicum, tomato, potato, sweet potato, chickpeas and dressing in a salad bowl. Toss to combine. Serve.

Use two cans of chickpeas and place half in an airtight container as a healthy snack.
This salad tastes great with or without dressing.
