Spicy Sausage Bacon Casserole

As the winter nights close in, I'm drawn to warming, single pot dishes, stewed slowly. The addition of heat caused by the spiced paprika (or chilli powder, if you don't have any) makes this the perfect casserole for cold, chilly evenings. This dish is especially delicious when made with the finest pork sausages, procured from your local butcher.

Preparation Time: 20 minutes
Cooking Time: 45 minutes
Makes: 4-6 servings

Ingredients
9 excellent quality sausages from the butcher
4 rashers bacon
1 large onion
2 cloves garlic
1 400g carton / can chopped tomatoes
2 tbsp tomato puree
1 tbsp Worcestershire sauce
2 tbsps sunflower or vegetable oil
1 tsp smoked paprika (pimiento) or chilli powder
300ml chicken stock
1/2 tsp dried oregano
1/2 tsp dried thyme
3 sprigs fresh thyme
2 bay leaves
1 tbsp soft dark brown sugar
1 x tin of mixed beans

Method
  • Heat a tablespoon of oil in a non-stick frying pan

  • Gently fry the sausages for 10 minutes, turning every now and then until browned all over



  • Transfer to a large saucepan or a flameproof casserole dish and set aside.

  • Chop the bacon into small pieces



  • Fry the pieces of bacon in the frying pan until they begin to brown and crisp then add to the sausages.

  • Slice the onions into thick slices.

  • Add the onion to the frying pan (adding more oil if needed) and cook gently for 3 minutes

  • Add the garlic to the onion and continue to cook until the onion has began to soften and turn brown



  • Sprinkle over the smoked paprika and cook for a minute or so



  • *Now stir in the tomatoes, chicken stock and tomato puree

  • Then add the Worcestershire sauce

  • Sprinkle in the herbs and brown sugar

  • Add the fresh bay leaves

  • Add a little water (or red wine, if you prefer) and bring to a simmer

  • Transfer the tomato sauce mix to the pot containing the bacon and the sausages



  • Drain and rinse the tin of mixed beans then stir into the casserole dish
  • Bring to a simmer for 20 mins
  • Serve, piping hot, alongside mashed potatoes and winter greens such as broccoli, for a warming and hearty feast
  • Season to taste
