Spicy Scrambled Eggs

Scrambled eggs on toast are a traditional breakfast favourite but I find them a bit too plain. Here's an idea that adds interesting flavours and textures to plain eggs.



Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 small servings

Ingredients
1 tbsp vegetable oil
1/2 onion
1/2 red pepper
1 preserved or fresh chilli (to taste)
2 eggs
1 tsp cayenne pepper (to taste)
Salt and pepper

Method
  • Heat the oil in a large, heavy-bottomed frying pan.
  • Slice the onion and red pepper into fine strips.
  • Cook the onion and red pepper in the heated oil until they start to soften.



  • Slice the chillies into small pieces and add them to the onion and pepper in the pan.
  • Beat the eggs along with the chilli powder and a pinch of salt and pepper to taste. You could swap the chilli for Cayenne pepper if you wanted a slightly less hot flavour.



  • Add the eggs to the pepper and onion pan and scramble with a wooden spoon by stirring constantly as they cook.



  • Serve on hot buttered toast.



  • Variation: try a Cajun spice mix to add a slightly different flavour.
