Spicy Scrambled Eggs
Scrambled eggs on toast are a traditional breakfast favourite but I find them a bit too plain. Here's an idea that adds interesting flavours and textures to plain eggs.
Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 2 small servings
Ingredients
1 tbsp vegetable oil
1/2 onion
1/2 red pepper
1 preserved or fresh chilli (to taste)
2 eggs
1 tsp cayenne pepper (to taste)
Salt and pepper
Method
Heat the oil in a large, heavy-bottomed frying pan.
Slice the onion and red pepper into fine strips.
Cook the onion and red pepper in the heated oil until they start to soften.
Slice the chillies into small pieces and add them to the onion and pepper in the pan.
Beat the eggs along with the chilli powder and a pinch of salt and pepper to taste. You could swap the chilli for Cayenne pepper if you wanted a slightly less hot flavour.
Add the eggs to the pepper and onion pan and scramble with a wooden spoon by stirring constantly as they cook.
Serve on hot buttered toast.
Variation: try a Cajun spice mix to add a slightly different flavour.
