Tomato rice,also known as Thakkali Sadam in Tamil, is a South Indian cuisine.This recipe is slightly modified from the traditional recipe.

Cooking Time: 20 minutes
Makes: 4 servings
Ingredients
2 cups cooked rice (white or basmati )
1 onion
3 tomatoes
3 bay leaves
3 curry leaves
1 chilie (green or red)
3 tbsp butter
1/4 tsp fennel seeds
1/4 tsp cloves
1/8 tsp turmeric powder
1 tsp chilie powder
1/8 tsp nutmeg powder
Cilantro and mint leaves to garnish
salt to taste
Method
Heat butter in medium heat. When hot pop fennel seeds and clove. Add bay leaves.
Add chopped onion,curry leaves and chilie. Stir well and cook until the onion is soft and translucent.
Add turmeric,chilie and nutmeg powder and stir well to combine.
Add chopped tomatoes and salt.Stir and cook until the tomatoes are smashed.
Then add the rice and mix well. Add the chopped cilantro and mint leaves. Mix to combine. Cover and cook for 2 minutes.
Switch off the flame and let it sit for 5 minutes for the flavors to incorporate.
