Spicy Yellow Tomato Chutney

If you like chutney that packs a punch, then this hot and spicy tomato chutney is just for you. If you prefer your chutney sweet, then try out my milder tomato chutney.

Preparation Time: 35 minutes
Cooking Time: 2 hrs
Makes: 3 kg

1.65kg yellow plum tomatoes
500g golden caster sugar
650ml malt vinegar
2 large cooking apples
3 eating apples
3 yellow peppers
3 small onions or 2 large brown onions
1 tsp salt
1 tsp ground ginger
1 tsp ground mace
1 tsp ground white pepper
1 tsp tumeric
1 tsp chilli powder
3 tsp cumin seeds
2 tsp mustard seeds
1 tbsp olive oil

Put the tomatoes in boiling water for a couple of minutes, then drain.
Plunge the tomatoes into cold water, then peel off the skins.

Put the tomatoes in a large in a large pan with the olive oil, then add the cumin and mustard seeds. Cook at a low heat until they start to pop.

Peel, core and chop the apples, then add to the pan.

Chop the onions and peppers and add to the pan.

Allow the mixture to simmer until it has become a pulp and the liquid reduced.

Add the sugar and salt.

Pour in the vinegar, and stir frequently until the liquid has reduced.

Bottle the chutney into freshly washed warm jars.
