Spicy Zucchini Quinoa Fritters

These spicy zucchini and quinoa fritters are nourishing, protein packed and absolutely delicious. Serve them with salad for lunch or dinner or with a side of tzatziki for a great snack.



Preparation Time: 10 minutes
Cooking Time: 25 minutes
Makes: 8-10 servings

Ingredients
1 zucchini
1 cup of cooked quinoa
2 heaped tbsp of almond meal
1 free range egg
2 spring onions
1 clove of garlic
1 teaspoon chilli flakes
1/2 teaspoon of paprika
1/2 teaspoon of cumin
Salt and pepper
50 grams sesame seeds



Salad and tzatziki to serve.

Method
  • Grate and drain the zucchini and place in a large bowl with the crushed garlic, egg, spices, snipped spring onion and cooked quinoa.



  • Mix well, add the almond meal (I make my own by blending raw almonds, much cheaper and fresher than store bought almond meal!) until the texture becomes sticky and not too wet.



  • Roll spoonfuls of mix into flat circles and roll across a plate with the sesame seeds.



  • You can either bake or fry your fritters. To bake line a tray with baking paper and bake at 180° for 20 minutes, turning half way though. To fry pour enough vegetable oil into a pan and fry on a medium-high heat for 3 minutes on each side.



  • Once the fritters are ready serve them hot with tzaziki and salad or pack them for lunch and enjoy cold.
