Spinach and Bacon Potato Bake
What could be more comforting than potato bake and bacon? It couldn't hurt to put spinach in there, it tastes great and its good for you.
Preparation Time: 25 minutes
Cooking Time: 60-70 minutes
Serves: 4 (as a side)
Ingredients
100 g washed baby spinach
4 medium potatoes peeled and washed
3 rashers of bacon
250 ml of cream
50 ml milk
1/2 teaspoon each paprika and onion powder
3/4 cup grated tasty cheese
1 tablespoon butter
Salt and pepper, to taste
Method
Preheat oven to 180C/170C fan
Slice the potatoes on a mandolin or by hand into 3-4 mm thick slices. Dice up the bacon.
Heat a frying pan to medium-high heat and add the butter then the bacon. Fry the bacon for about 7 minutes, then put in the spinach and cook until it has wilted. Remove pan from heat.
In a small jug, mix the cream, milk, paprika, onion powder, salt and pepper.
In an 10 cup capacity baking dish, layer 1/3 of the potatoes followed by 1/2 of the spinach mix. Repeat this process and then add the last 1/3 of the potatoes.
Pour the cream mixture over the top of the potatoes.
Cover and bake for 50 minutes.
After 50 minutes sprinkle the cheese on top. Bake uncovered for a further 15-20 minutes until cheese is golden and potatoes are tender.
