Spinach and Cheese Pie

Our vegetable garden is blessed with an abundance of greens right now and my favorite way to use them up is in this easy , inspired by a traditional Greek "Spanakopita". Surprisingly my children who don't usually eat their "greens" really love eating this Spinach and Cheese pie, so hopefully yours will too?.

Preparation Time: 20 minutes
Cooking Time: 35 minutes
Makes: 1 large pie

Ingredients
10 "sheets" Fillo pastry (frozen sheets are fine)
125g feta cheese - crumbled
125g parmesan cheese
125g ricotta cheese
1 large bunch silverbeet/spinach greens
125 g melted butter
2 eggs
1/2 cup olive oil
1 teaspoon sea salt
1 teaspoons freshly ground pepper

Method
  • Wash spinach/greens, remove any stems or stalks, drain and chop.
  • In another bowl, beat the eggs, add crumbled feta cheese, ricotta cheese, and parmesan cheese, sea salt, freshly ground pepper and olive oil. Mix until well combined.
  • Take a large baking dish, grease and line with 5 sheets of fillo. Brush every second sheet with melted butter.
  • Cover pastry sheets with spinach/greens, then cover spinach/greens with the egg and cheese mixture. Cover with remaining 5 fillo pastry sheets. Brushing each layer with melted butter. Fold over fillo sheets to make a tidy edge.
  • Bake in moderate oven for 35 minutes or until golden brown. Let pie stand for 5 minutes before cutting. Serve with a delicious Greek salad or Mango Chutney (see my recipeyum.com recipe for this delicious recipe too) and enjoy.
