Spinach and Feta Stuffed Chicken
Feta always seem to add taste to recipes, and this is probably due to the salt content.
When using feta I would never add salt to a dish as they just do not need it.
I have used frozen spinach for this recipe as I find the frozen spinach has more taste than my home grown spinach, which the worms had got to anyway!
Preparation Time: 15 minutes
Cooking Time: 30 minutes
Serves: 2
Ingredients
1 large chicken breast (cut in half lengthways)
1 tsp garlic, crushed
1 packet frozen spinach
½ cup feta cheese
½ cup breadcrumbs
2 tbsp butter
Method
Preheat the oven to 180°/160° fan forced.
Pound the chicken breasts until they are very thin and are therefore larger than before you started.
Squeeze all the water out of the spinach and cook it with the garlic, in a small frypan, for a few minutes.
Turn off the heat and add the crumbled feta and mix well.
Spread the mixture onto each chicken breast, noting that there will be some left over. Do not overfill near the edges.
Wrap the chicken around this mixture and secure it with toothpicks.
Roll each breast in the breadcrumbs until they are well coated.
Put them in a glass baking dish, and pour the butter over them.
Bake for about 20 - 25 minutes and serve.
I cut them into slices before putting on the plates but this is optional
I served them with my potato salad, however an ordinary green salad would go well, or even plain vegetables.
I also served the left over spinach mixture as a vegetable
You could also cut these into thin, bite sized pieces and use them as party food, either hot or at room temperature.
