Spinach and Squash Pasta Pie
This open pie uses lasagne sheets instead of pastry for the base and fresh tomatoes for the sauce.

Ingredients
1kg tomatoes
230g frozen spinach
200g onion, diced
500g butternut squash, cubed
200g cheddar cheese
1 tbsp dried basil
1 tbsp mixed spice
12 lasagne sheets
Method
Soak the lasagne sheets in boiling water for 10 minutes.
Take three 6" inch pie tins and line them with four lasagne sheets each.
Puree the tomatoes in a food processor, and then pour the contents into a large frying pan, along with the spinach, butternut squash, and onions.
Simmer for 15 minutes and then stir in the herbs and spices.
Grate the cheese and stir half into the mixture.
Once the cheese has melted, transfer the mixture into a colander and allow the excess juices to drain.
Divide the mixture between the three tins.
Sprinkle it over the open pies.
Bake in the oven for 20 minutes.
