This cheesy spinach bake can be enjoyed on its own or as a side with a main.

Ingredients
100g spinach leaves
500g new potatoes
100g Comte cheese (or Cheddar)
50g Stilton cheese
50g sun dried tomatoes
300ml semi-skimmed milk
30g plain flour
30g butter
Method
Steam the potatoes for 15 minutes, or until you can easily stick a knife through them.
Slice the potatoes and place in a baking dish.
Steam the spinach for 3 minutes or until it has wilted and layer on top of the potatoes.
Pre-heat oven to 180 ༠C/ 160 ༠C fan/ 375 ༠F/ 5 Gas.
Grate the cheese and put to one side.
Heat the milk in a saucepan.
In a separate saucepan, melt the butter, and then gradually stir in the flour until it forms into a bowl.
Very gradually, pour in the milk. Stir continuously and vigorously until it turns into a smooth white sauce.
Gradually stir in the cheese for a smooth cheese sauce.
Pour the sauce over the potatoes and spinach.
Scatter the tomatoes on top and then crumble over the Stilton.
Bake in the over for 20 minutes
