Spinach Baked Eggs with Mushrooms Brunch 14

I had a lot of English spinach growing so decided to try something different with it.

I baked the spinach, mushrooms and an egg in ramekins and this is #14 in my brunch recipes. I had a leftover one for dinner the next night with a salad, so it is a versatile meal!

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 2 servings

Ingredients
125 g mushrooms, quartered if small
120 g baby spinach
2 eggs
2 tbsp thickened cream

Method
  • Preheat the oven to 200°/180° fan forced.

  • Heat some oil in a large wok or fry pan and add the mushrooms.
  • Mushrooms should be cut no larger than this


  • Cook them, stirring for about 1 minute.

  • Add the spinach and cook another minute or so, or until the spinach is just starting to wilt. Add some salt and pepper.


  • Divide this mixture between two ovenproof dishes - I used oblong ramekin type dishes.


  • Break an egg on the middle of each one, and add the cream on the top. Add salt and pepper to this.


  • Bake for about 10 - 15 minutes or until the eggs are JUST set - they will continue cooking a bit when you take them out of the oven.

  • Serve.
