Spinach Cheese and Egg Pies
These are free form pies, and I made the dough myself instead of using a bought one.
The baked egg added extra and a slightly different taste to spinach and cheese.
Preparation Time: 20 minutes
Cooking Time: 30 minutes
Serves: 2
Ingredients
1 packet frozen spinach, thawed
50 g feta
120 g ricotta, drained
2 spring onions, sliced
A bit of dill
1½ cups flour
Half a packet of dried yeast -3.5 g
½ tbsp sugar
2 eggs
Method
Squeeze all the liquid out of the spinach, and put in a bowl.
Add the feta, ricotta, spring onion, and dill, and stir to mix.
Preheat the oven to 210°/190º fan forced, and line a baking tray with baking paper.
Combine the flour, yeast, sugar and some salt in another bowl. Make a well in the centre, and add ½ cup of cold water.
Mix this until it is all combined, and it turns into a soft dough.
Put the dough on a floured surface and knead for 5 minutes or until it is a smooth ball.
Divide the dough into two portions.
Roll out the dough to make an oval shape about 25 cm long.
Leave a border around the edge, and put half of the spinach mixture down the centre.
Fold up the sides of the dough and pinch the edges together to seal them, at the same time leaving a large opening down the centre (for the egg).
Make an indent in the centre of this filling, and crack an egg into each.
Spray them with some oil, and bake for about 20 minutes or until the egg is set.
