Spinach Hummus
Hummus is a favourite snack in my house but sometimes it's fun to change it up a bit. This spinach hummus is a beautiful vibrant green, full of the goodness of raw spinach. Hummus usually calls for garlic, but I've used spring onion instead, as I enjoy the milder taste it brings.
Preparation Time: 5 minutes
Cooking Time: 0 minutes
Makes: 1 1/2 cups
Ingredients
1 cup cooked chickpeas
1 cup baby spinach leaves
1 spring onion
1 tbs unhulled tahini
1/4 cup lemon juice
2 tbs extra virgin olive oil
1/2 tsp sea salt
1/2 tsp cumin powder
Method
Place all ingredients in a high speed blender (you can also use a food processor).
Blend until smooth.
Serve with crackers, vegetable sticks, on bread, or however you desire. Store in a jar in the fridge for up to a week.
